Sweet n' Sour Chicken Recipe

2 whole chicken breasts, skinned, boned, cut into 1" pieces
½ tsp. salt
1 beaten egg
½ cups Bisquick
1 cup oil
⅔ cups sugar
2 Tbsp. cornstarch
1 Tbsp. paprika
1 (1 lb. 4 oz.) can pineapple chunks, drained - reserve juice
¼ cup soy sauce
¼ cup vinegar
1 cup green pepper strips
½ cup onion, sliced
2 medium tomatoes, cut up

Directions:

Sprinkle chicken with salt, coat with egg, then Bisquick. Fry in hot oil (a few at a time) till golden brown. Drain and keep warm in oven.

Combine sugar, cornstarch and paprika in 10 inch skillet. Add enough water to drained pineapple juice to make 2 cups and add to skillet with soy sauce and vinegar. Cook stirring constantly until it boils. Boil 1 minute. Add green pepper and onion.

Cover and cook about 5 minutes. Add pineapple and tomatoes. Heat through; add chicken.

In order not to have to do all this at the last minute, cook the chicken and make the sauce the day before. At the last minute reheat the sauce then add the pepper and onion, then pineapple, tomato and chicken while rice is being prepared. No smell of frying chicken and no mess. Serve with rice.
