1 lb. boneless, skinless chicken breasts or ground chicken/turkey
1 tsp. olive oil
1 cup onion
1 Tbsp. garlic, minced
1 tsp. to 1 Tbsp. chopped green chilies, canned (to taste)
3 Tbsp. ground cumin
½ to 1 tsp. white pepper
dash cayenne pepper
1 (14½ oz.) can chicken broth
1 (15 oz.) can Great Northern White beans, drained
1 (19 oz.) can cannellini beans, drained
2 Tbsp. cornstarch
2 Tbsp. water

Directions:

Cut chicken into bite-size pieces.

Heat oil in Dutch oven and add onion. Add chicken to pot stirring occasionally until almost opaque.

Add garlic, chilies, cumin and peppers. Raise heat to high and add broth and beans. Cover pot and bring to a boil.

Combine cornstarch and water. Add chili and stir until it reaches desired thickness.
