2 pounds of beef bottom round roast
1 onion, cut into fourths
1 T chili powder
2 t salt
½ t pepper
2 cloves of garlic, crushed
1 chopped onion
2 T oil
1 can of stewed tomatoes
½ cup sliced olives
3 cups of hot brown rice
sliverd almonds

Directions:
Directions:
Place beef, onion, chili powder, salt, pepper, garlic, and 1 cup water in a 4-quart pressure cooker. Cover and cook at 15 pounds pressure for 35 to 45 minutes. Cool 5 minutes. Reduce pressure; drain. Cool beef slightly; shred into small pieces. To Serve: About 30 minutes before serving, cook and stir onion in oil in a skillet over medium heat until tender. Stir in beef, tomatoes, and olives. Heat stirring occasionally, 15 minutes. Uncover and simmer 5 minutes longer. Serve over rice. Sprinkle with slivered almonds if desired. ***Use your leftover roast to make this recipe.
