2 ½ cups self-rising flour
9 oz ricotta
9 oz Kashkaval or Parmesan, grated - divided
5 oz Feta, crumbled
1 egg
7 oz butter, melted

Directions:
Directions:
1. Preheat oven to 400º
2. In a large bowl, mix all of the ingredients, reserving 2 oz hard cheese. The dough should be very soft. Add a little flour if it’s too soft to roll.
3. Roll into 30 apricot sized balls.
4. Line a baking sheet with parchment paper.
5. Dip the dome of each ball into the reserved cheese and place on prepared baking pan.
6. Bake for about 20 minutes until golden brown.
7. Cool slightly on rack.
