2-3 lb. chuck roast
2 T. olive oil
4 potatoes cut into chunks
5 carrots cut into chunks
1 onion cut into chunks
1 can tomatoes (pasta-style)
1 small can tomato paste
basil
oregano
garlic salt
1 c. water

Directions:
Directions:
Brown roast in olive oil in large sauce pan. Add tomatoes, paste, water and seasonings. Stir, cover and simmer 1-1/2 hours. Watch closely so it doesn't burn. Add potatoes, carrots and onions. Cook until tender 45 min. to an hour.
