INGREDIENTS

1lb of salmon (for 2-3 people)
2 tbsp Dijon mustard
1/2 tbsp of mayonnaise
Good quality extra virgin olive oil
Dried Herb de Provence
Salt and pepper to taste
1 batch of Brocolinni (long stem broccoli)
Dried Red Pepper Flakes
Fresh Parmesan Cheese





Directions:
Directions:
1. Set oven to 350°
2. Take a large sheet of tin foil, enough completely encase the salmon fold edges upwards to create a shallow bowl shape around the salmon.
3. Drizzle olive oil over the fish and gently rub into the salmon.
4. In a side bowl, mix together the Dijon, Mayonnaise and Herb de Provence and whisk together.
5. Scoop out the mixture onto the fish and gently rub into the fish.
6. Sprinkle salt & pepper to taste.
7. Gently fold the edges of the tin foil inwards so all the edges touch together, creating enclosed casing, leaving a little opening in the centre to allow airflow.
8. Place the tin foil enclosed salmon on a baking sheet.
9. Place the washed Broccolini on the other side of the baking sheet beside the salmon.
10. Drizzle Olive Oil over Broccolini and sprinkle dried red pepper flakes and salt and pepper on the greens.
11. Bake for 30 minutes.
12. Remove from oven, open the tin foil pouch and place the baked salmon on a serving platter.
13. Place the roasted Broccolini on either the same platter as the salmon or a separate dish and sprinkle fresh Parmesan on the greens.
