Ingredients: Ingredients (serves 2- 2 enchiladas per person):
Chili Gravy- 4 tbsp bacon grease 4 tbsp flour 1/2 cup chicken broth 3 cups water 1 12 oz can tomato paste 2 tbsp chili powder 4 tsp cumin 3 tsp salt (add extra tsp of salt to taste, if needed) or use Veggie Sal 2 tsp garlic powder 1 tsp oregano 1 tsp black pepper 1/2 tsp achiote paste smallest pinch of monk fruit

Directions:1. Prepare chili gravy- In medium size skillet, heat bacon grease over medium high heat. When hot, add flour. Stirring constantly, cook for 1-2 minutes. Add chicken broth. Mixture will form a clumpy ball. Cook for 30 seconds to 1 minute, moving roux around. Add 1/2 cup of water, stir until incorporated. Add the rest of the water in slow additions. When water is incorporated, add tomato paste. Add chili powder through sugar, stirring constantly to combine. Add more water if gravy is too thick. Turn heat to low, and cook for 10-15 minutes, stirring occasionally. Remove from heat. Refrigerate overnight, or use immediately. If refrigerating overnight, warm sauce in skillet for a few minutes before use. |

Notes: Daughter Ashley's Aunt Patti ran a Mexican restaurant called Tia Zia. For years, my favorite meal was a beef enchilada with red enchilada gravy, lettuce, and tomatoes. And Ashley loved their potachos, which was basically a baked potato with the gravy, meat, and sour cream on it. That restaurant has been gone for quite a few years now, and I still miss my favorite, and I know Ashley does too. Over the years, I have tried to make enchiladas using canned store bought enchilada sauce. It always was disappointing, and then I discovered I was using the wrong thing. Enchilada sauce isn't necessarily enchilada gravy.
This year, 2021, post Covid, we are all traveling again, and headed to our cabin in Custer South Dakota. As I was planning some family meals, I really wanted to provide a meal that would bring back memories, and so I did some searching, creating, and editing, and came up with this enchilada gravy, that seems pretty close to Tia Zia and will allow us to enjoy our memories of that special place.
