1 Tbsp Olive Oil
1-2 lb boneless chicken cut into small cubes
1/2 chopped onion
1 Cup Chicken broth
1 4 oz can green chilies
3 cans assorted beans (kidney, cannelloni, pink, etc)
1 Can Rotel chopped tomatoes with chili
2 green onion sliced
1 tsp Garlic Powder
1 Tsp ground cumin
1/2 tsp oregano leaves
1/2 tsp cilantro
1/4 tsp red pepper

Directions:

Heat oil in large skillet over medium high heat. Add onions and chicken. Cook 4 or 5 minutes. Stir in broth, spice blend and chilies. Simmer about 15 minutes. Stir in beans and cook another 5-10 minutes. Garnish with green onions, more chilies, Mexican cheese

All these ingredients can be adjusted to taste. This is just the original recipe.
I've also doubled and tripled at times. Also have thrown everything in the crock pot and cooked. Like to serve with corn bread and/or chips
