3 lb flank steak
3/4 C dry sherry
1/2 C low sodium soy sauce
1/2 C honey
3 T vegetable oil
1 large clove garlic minced
3 tsp ginger grated
Pinch of red chili flakes
2-3 bunches scallions, cleaned and trimmed

Combine first eight ingredients in a large bowl or sturdy plastic bag for 2 hours at
room temperature. Remove meat from marinade and pour liquid into sauce pot. Simmer over low-medium heat and stir, carefully, so it doesn't boil over. Grill meat as desired over high open flame, remove and let rest.

In the meantime toss scallions in a bit of oil and grill 1-2 minutes until wilted. Slice steak across the grain and drizzle syrup down the middle or on the side. Add scallions to side and sprinkle with salt and pepper to taste.
