Mnuhzalee - Poor Man's Stew
Vegetable Stew

Ul-lee-yee (sautéed onion)
1/4 c. oil
1 onion - the size of a baseball

Finely chop the onion. Put onion and oil in a large saucepan and sauté until the onion is pink.
On top on the ul-lee-yee place the following ingredients:
These measurements are not exact. You can make any combination you like. 2 cups cubed potatoes
1 cup celery
1 cup. cubed eggplant (optional - I prefer it without because the eggplant gets
mushy.)
1 cup carrots
1 cup cubed zucchini
1 can of chick peas which have been drained and washed.
Layer these in this order with the chick peas on top. Pour on ton of this -
1 8 ounce can of tomato sauce
1/2 tsp. salt
1/4tsp. pepper 1/2 tsp. allspice 1/4 tsp. cinnamon
Add enough water to cover. Cook gently for about 25-30 minutes or until cooked.
Adjust seasonings to your taste.
