2 cans of coconut milk
1 tbsp curry paste - green or red
1 bunch of cilantro
1 rotisserie chicken
1 carrot -grated
1 small onion -thin slices
2 tbsp lemon grass -crushed
2 limes
2 tbsp ginger -crushed
2-3 c bean sprouts
1 package rice noodles
1 bunch cilantro leaves
3 spring onions -thin sliced
1 tsp soy sauce
2-3 c cauliflower small pieces

Directions:
Directions:
1. Remove meat from chicken, place carcass in enough water cover to make stock- boil 30 min and strain out bones.
2. Add curry, carrot, cauliflower and onion let cook till tender. Add ginger and lemongrass and cook till fragrant 2 min.
3. Add shredded chicken meat, coconut milk and simmer 15 minutes.
4. Add rice noodle till soft. Add bean sprouts and add cilantro. Season to taste with salt or soya sauce.
5. Serve with additional cilantro, green onion, lime and chilies if wanted.
Instead of soup, can serve over rice. Just delete noodles and thickened with 1 tsp cornstarch in 100 ml water.
