1 (29 oz) can Libby’s pumpkin
1 c. vegetable oil
3 c. sugar
2 eggs
2 tsp. vanilla
5 c. flour
1 tsp. salt
2 tsp. baking soda
2 tsp. baking powder
3 tsp. pumpkin pie spice

Cream cheese frosting:
2 sticks margarine
2 (8oz.) cream cheese
32 oz. powdered sugar
4 tsp. vanilla

Cookies:
Preheat oven to 375 degrees. Mix all ingredients together and drop by teaspoonfuls on greased cookie sheet. Bake for 13 minutes. Cool completely before frosting.

Frosting:
Mix all ingredients together. You may need to add more powdered sugar to reach desired texture. Spread generous amounts of frosting on cooled cookies. There will be extra frosting.
