2 cups quick oats
1 cup almonds or other nut, roughly chopped
1 tsp. Cinnamon
½ tsp. Salt
2 tbsp coconut oil
¾ cup creamy peanut butter (or any nut butter)
½ cup honey (maple syrup would probably work too, but I wouldn’t want the maple flavor)
1 tsp vanilla
⅔ cup chocolate chips (or your hearts desire :)
½ raisins (I like golden, lighter taste)

1. Line an 8x8 baking pan with parchment paper
2. Combine oats, almonds, cinnamon, and salt in a bowl, stir to combine
3. In small saucepan, combine coconut oil, peanut butter, honey, and vanilla until warmed through and coconut oil has melted
4. Add wet ingredients to dry and stir to combine. Let the mixture rest for 30 minutes before adding the chocolate chips so they don’t melt. Then add chips and raisins
5. Pour mixture into prepared baking pan and refrigerate at least 2 hours, or overnight. 6. Use a sharp knife to cut into desired pieces (bars, squares)
7. Keep in fridge or freezer

I sprinkled with chia seeds to make more filling/healthier. You can add anything to them, hemp, flax, chia, other nuts, etc. You could also make into balls for a quick energy bite!
