½ cup beef suet ( shortening)
½ cup brown sugar
1 cup raisins
½ cup currants
¼ tsp each of cinnamon, cloves, nutmeg, allspice
½ tsp salt
4 tsp baking powder
2 cups flour
¾ cups milk

Directions:
Directions:
Combine all dry ingredients together and then add milk and mix.
Fill greased tins or bowls 2/3 full to leave room for pudding to expand.
Cover each with brown paper and fasten with string ( Parchment paper
fastened with elastics would also work). Steam for 2 ½ to 3 hours.

Serve warm topped with Lemon sauce.

Lemon Sauce:

½ c sugar
1 c boiling water
1 tbsp. cornstarch
2 tbsp. butter
½ tsp Blue Ribbon lemon extract

Mix the sugar and cornstarch, stir into them the boiling water, and boil 5 minutes. Take from the fire and add butter and lemon extract.
