shad roe
1 T lemon juice
1 tsp salt
shad fillets
flour
bread crumbs
butter or margarine

Directions:
Directions:
Gently boil the roe in water, lemon juice, and salt for 10 minutes. Then broil or bake basing with butter or margarine. Dust the shad fillets with flour. place in shallow baking tin. Add roe to top of fillets. Cover with bread crumbs. Place on top rack of a preheated oven. Broil 6 minutes. Test.

A really regional dish. Dad loved it. I remember going with him to Cheraton on Broadway in South Saint Louis to get shad roe and oysters. I recall Mom cooked the shad roe by itself. I think she baked or broiled it. As a child I couldn't believe anyone would eat either!

The roe has to be removed from it's "robe" prior to cooking. I assume it may take longer to broil than 6 minutes, because Grandma said to "test" it.
