2 tbsp butter
1 small onion, minced
1 15-oz can of corn, drained
1 15-oz can pumpkin puree
1-1/2 cups water
Maple syrup to taste
2 tbsp honey
1 tsp salt
1/4 tsp cinnamon
1/4 tsp mace
2 envelopes chicken bouillon
2 cups half and half
1 tbsp chopped parsley

About 30 minutes before serving: In a saucepan over medium heat, add butter and cook onion until tender, stir. Add corn. Stir in pumpkin, water, sweeteners, salt, spices, and bouillon until blended and the mixture begins to boil. Cook 5 minutes. Stir in half and half; heat but do not boil. Serve garnished with the parsley. Makes about 6-1/2 cups.
