1 tbsp butter
3 medium carrots, chopped (I use bagged matchstick carrots)
4 garlic cloves, minced
6 cups water
2 tsp reduced-sodium chicken base
3/4 tsp Italian seasoning
1 package (16 oz.) potato gnocchi
2 cups cubed chicken breast (I sometimes buy plain shredded chicken at the deli)
1 cup frozen peas
1/2 tsp pepper
1/2 cup shredded parmesan cheese

In a Dutch oven, heat butter over medium heat. Add carrots, cook and stir 8-10 minutes or until crisp-tender. Add garlic, cook 1 minute longer. Stir in water, chicken base, and Italian seasoning; bring to a boil. Add gnocchi Reduce heat and simmer uncovered 3-4 minutes or until gnocchi float. Stir in chicken, peas, and pepper; heat through. Top servings with cheese.

Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary.

I LOVE THIS SOUP. This is a recipe from the Taste of Home website. It's originally made with turkey, but I tend to have chicken on hand more than turkey. I often find potato gnocchi at the Dollar Store at about 1/3 the price of gnocchi in the supermarket.
