1 1/2 cups dry red wine or beef broth
1/2 cup ketchup
1/4 cup packed brown sugar
3 tbsp soy sauce
5 sprigs fresh thyme
4 lb (1.8kg) beef short ribs
1/4 tsp salt
1/4 tsp pepper
1 tbsp canola oil
3 large carrots, cut diagonally into 1 1/2-inch slices
2 medium red onions, each cut into 6 wedges

Line the slow cooker with a bag or spray the sides
In slow cooker, mix wine, ketchup, brown sugar and soy sauce. Add 5 thyme sprigs.
Sprinkle ribs with salt and pepper. In 12-inch skillet, heat oil over medium-high heat. Add half of the ribs; cook about 8 minutes until brown on all sides. Remove from skillet and add to slow cooker. Repeat with remaining ribs. Place carrots, onions and potato’s over ribs in slow cooker. Cover; cook on Low heat setting 8 hours or until meat and vegetables are tender.
