1 cup ghee
1 cup sugar
⅔ cup brown sugar
2 eggs
1½ tsp vanilla
2 tsp bread soda
½ tsp salt
1 cup all-purpose flour blend
1 cup rice flour
¼ cup arrowroot
2 Tbsp psyllium husks/powder
1-2 tsp flax and chia seeds, ground
scant 2 cups whole almonds, toasted and chopped
1½ cups pecans, chopped
1 cup chocolate chunks or chips
2 cups raisins or sultanas, chopped


Directions:

Preheat oven to 180ºC/350ºF. Beat the ghee and sugars until light, blend in eggs and vanilla before adding in remaining ingredients. Folding in the nuts, chocolate and raisins at the end. Drop the dough by large spoonful onto un-greased baking tray and bake for 7-8 minutes or until edges are golden. Transfer to a wire rack and let cool before storing in an airtight container.

These cookies are a good, all-rounder. They're easy to mix up. They freeze well as dough or in cookie form. They taste good anytime of the year. They can be altered for an on-the-go breakfast cookie. Or simply enjoyed while you relax with your favourite cuppa.
