Ingredients: Filling water 4 cooker apples, peeled, cored and cut into chunks ¼-½ cup sugar pinch of cloves
Pastry 1 cup all-purpose flour blend, plus more for rolling ½ cup ground almonds ½ cup arrowroot 1 tsp guar gum scant tsp salt 1 Tbsp sugar ½ cup butter 1 egg, beaten 1 tsp vanilla 4-6 Tbsp kefir

Directions:Place the apples in a saucepan with 2-4 tablespoons of water. Simmer the apples with sugar and cloves in water until they just tender. Taste for sweetness, adjust if necessary and set aside while you prepare the pastry.
Roll out the pastry to fit a dinner plate. Line with the pastry and distribute the cooked apples over the pastry. Roll out the top for the tart and fit over the apples, gently press the pastry down on the apples and seal the edges with the tines of a fork, slice the top and bake at 200ºC/400ºF for about 25-30 minutes or until golden and bubbly. |

Notes: An Irish apple tart is thin in comparison to an American apple pie. Often the apples are still quite tart so the cloves round this out with the buttery pastry. A friend gave me her recipe, in much the way my Great-grandmother gave her recipes... a handful of this, a pinch of something else, going by feel more so than exact measurements.
