1 Tbsp coconut oil or sesame oil
1 ¼ lbs chicken breasts, cut in thin strips
4 tsp red curry paste (medium)
1 onion
1 red sweet pepper, cut in thin strips
1 lemon, grate rind and squeeze juice
1 cup coconut milk
2 Tbsp fish sauce or soy sauce
⅓ cup fresh cilantro chopped

Directions:
Directions:
1. In skillet, heat curry paste for 30 seconds in 1Tbsp coconut oil.
2. Add chicken, stir-fry 3 minutes, add onion stir fry 1 minute.
3. add red pepper and lemon rind, stir-fry 1 minute
4. add cocnut milk, fish sauce, and lemon juice, bring to boil and simmer 2 minutes. Stir in coriander. 4 servings.
