First mix:

10 lbs. 85/15 hamburger
2 c. water
3/4 c. black pepper
1/2 c. tenderquick
3 T. garlic powder

Before stuffing:

1/2 qt. water
3 oz. Sure-Jell

Stuffing:

2 1/2" x 24" casings

Directions:
Directions:
Mix hamburger with water, pepper, tenderquick and garlic powder. Let sit overnight.

Before stuffing, mix up again adding water and Sure-Jell. Stuff in casings.

Cold smoking:

Cold smoke a total of 5 times. 7 handfuls of hickory sawdust, 2 handfuls of cherry chips, 2 handfuls of apple chips per cold smoke.

Cold smoke twice per day, once at 8 a.m. and once at noon.

Let hang 5 extra days in the smoker after smoking

Check for firmness. Hang in basement 1-3 additional days if still too soft.
