1 cup treacle or corn syrup
1 cup sugar
1 Tbsp butter
¾ tsp salt

12 oz raw peanuts
1 tsp bread soda

Directions:
Liberally grease a baking tray and set aside. Next, in a large saucepan, heat treacle/syrup, sugar, butter and salt until sugar has dissolved. Increase the heat and bring mixture to 112ºC/230ºF on an instant-read thermometer, once the mixture becomes light brown add in the peanuts, stirring continuously. Keep stirring until the mixture is a rich brown and reaches hard crack stage, 155ºC/305ºF. Remove the pan from heat and quickly stir in bread soda, mix well. Carefully, pour the hot mixture onto prepared baking tray, spreading and pulling mixture to edges. Allow to cool and set. Immediately break the candy into chunks, by gently tapping the tray on a hard surface or using buttered hands to snap into bits. Store in an airtight container for up to 1 week.

Mmm, of the candies my Mom made, back when she'd spend time in the kitchen, this was one of her finest. If you know my Mom, don't be fooled when she says she doesn't know how to cook, she could pull the best saltwater taffy, make the lightest peanut brittle and divine divinity. I know, I know, cooking's quite easy compared to candy making and yet she excelled at it.
