7 Tbsp ghee
2 cups light brown sugar
½ tsp ground cinnamon and/or ½ tsp vanilla
2 large eggs
1 cup all-purpose flour blend
2 Tbsp psyllium husks/powder
1 Tbsp flax and chia seeds, ground
½ tsp guar gum
½ tsp baking powder
½ tsp bread soda
¼ tsp salt
1 cup pecan halves or pieces

Preheat the oven to 180ºC/350°F. Grease a 9 inch square baking dish and line it with parchment paper, allow the paper to extend beyond the edge of the pan to use as handles to remove the bar after baking.

Melt ghee in a large saucepan over low heat. Add the sugar and cinnamon and stir until the mixture is smooth, about 6-10 minutes. Remove the pan from the heat, mix in vanilla if using, set aside until the mixture is cool. Use a wooden spoon or rigid spatula to beat the eggs into the mixture until thoroughly blended. Sift the dry ingredients over the mixture and stir to bring everything together. Last, scrape the sides and stir in the pecans, mixing just until combined. Spread the batter into the prepared pan and smooth the surface. Bake the blondies until golden and a knife inserted in the centre comes out clean about 35-40 minutes. Depending on your oven, you can start checking the blondies after 30 minutes. When done, remove from the oven and let cool in the pan for 10 minutes. Remove the bar from the pan and transfer to a wire rack to completely cool before slicing.
