1 cup (250 g) cooked beetroots, pureed
½ tsp vanilla
1½ cup caster sugar
¾ cup coconut oil
3 eggs
1 cup all-purpose flour blend
¾ cup buckwheat flour
1½ tsp bread soda
¼ tsp salt
6 Tbsp unsweetened cocoa powder

Preheat oven to 180ºC/350ºF and grease a 9x13 inch or similar sized cake pan. In a bowl, combine pureed beetroot, eggs, vanilla, oil and sugar. Mix with an electric mixer on low speed until well combined. Sift in the flours, bread soda, salt and cocoa and beating together. Pour batter into prepared pan. Bake for 25-30 minutes or until a knife inserted in the centre comes out clean.

This is a super moist cake and comes out similar to red velvet cake when light coloured cocoa powder is used. In this case, frost the cake with your favourite cream cheese icing.
