1/2 cup peanut butter
1/2 cup shortening
1 1/2 cups brown sugar
2 eggs (1/2 cup)
3/4 cup granulated sugar
1 tsp. baking soda
pinch of salt
3 cups sifted flour
1/2 cup coconut
1 cup salted Spanish peanuts (whole)
Directions:
Directions:
Cream together peanut butter and butter, add sugar gradually and cream together until light and fluffy. Add eggs and beat well. Mix in flour sifted together with baking soda and salt. Stir in peanuts and coconut. Drop from spoon onto a lightly greased cookie sheet. Bake at 350º oven for 10 minutes or until done. Don't over bake.
