½ cup sugar
1 lb butter
4 cups all-purpose flour blend
½ cup ground almonds
1 cup pecans or other nuts, chopped
1 tsp vanilla

1 cup icing sugar

Directions:
Directions:
Place 1 cup icing sugar in a deep bowl or ziplock bag, set aside. Preheat oven to 180ºC/350ºF.

Cream the butter and sugar together until light and smooth, add in the vanilla and mix in flour and nuts by hand. Roll dough into balls about the size of a whole walnut and place on baking tray, bake for 20 minutes, or until golden. When you take cookies out of the oven, toss them in the icing sugar then set on a wire rack to cool completely. Store in an airtight container. These freeze very well placed in between waxed paper in an airtight container.

These cookies are also known as Mexican wedding cookies or biscochitos when made with lard. Around the world these buttery morsels have their own nomenclature and yet the ingredients are essentially the same. Seems the secret is to get the butter and sugar as light and fluffy as possible.
