5 oz semi sweet and milk chocolate bars
½ cup ghee and/or coconut oil
1⅔ cup sugar
5 eggs
1½ tsp vanilla
1 cup ground almonds

Optional Possibilities
chopped nuts
chocolate chips
1-2 Tbsp instant coffee
½ cup dried fruit
marshmallows

Directions:

Preheat oven to 180ºC/350º and grease a square baking tray. In a saucepan, melt chocolate and ghee/coconut oil, remove when melted and incorporated, allow the mixture to cool before creaming with sugar and eggs. Stir in ground almonds and any other possibilities, stir just enough to bring the batter together. Pour into the prepared pan and bake for 20-25 minutes, or until a knife inserted in the centre comes out clean. Allow to cool completely before cutting into squares.

These are the brownies I made when I realised it wasn't necessary to bake with flour. The ground almonds give these brownies a molten-like quality, especially straight from the oven and therefore they mix deliciously with a scoop of ice cream - better than those expensive brownie ice cream tubs in the freezer section.
