Broccoli Pad Thai with Shrimp Recipe

1/2 C peanuts
8 oz. flat ride noodles
2 large eggs
vegetable oil
5 T fish sauce
2 T soysauce
2 T lime juice (one lime)
1 T creamy peanut butter
4 green onions
3 T sugar
1/2 t dried red chili flakes
4 cloves garlic, chopped
1 T fresh ginger, chopped
1 lb. shrimp
1.5 C broccoli florets only
1 C bean sprouts
1/2 C fresh parsley
lime wedges for serving

Directions:
Directions:
Add oil to wok or large saute pan. Once hot add peanuts and fry them. Remove from pan and lightly salt.

Prepare noodles. Do not overcook. 2 minutes max

Whisk together the fish sauce, soy sauce, lime juice, peanut butter, sugar and chili flakes. Set aside.

Add a bit more oil to the pan and place over medium heat. Add garlic, ginger and shrimp. Season with salt and cook, stirring constantly until shrimp is pink. Transfer to bowl with garlic and ginger.

Add 1 T oil to pan. Add broccoli, 1/4 C water and 1/4 t salt. Cook. Stirring constantly for 3-4 minutes. Transfer to bowl with shrimp.

Add 1 t of oil, add the beten eggs and scramble. Add to bowl with shrimp and broccoli.

Add 4 T oil to pan. Add the drained noodles along with fish sauce mix. Cook, tossing the noodles gently.

Add shrimp, broccoli and eggs to the pan. Add the green onions. Toss gently until warmed through. Add bean sprouts, fried peanuts and parsley.

Transfer to platter and serve with lime wedges.
