1 cup pure maple syrup
1/4 tsp. ground cardamom
3/4 tsp. ground cinnamon (divided)
1 strip orange peel
3 large eggs
2 Tbsp. dark brown sugar
1/2 cup whole milk
1 tsp. grated orange zest plus 1/3 cup fresh juice (from 1 large orange)
Pinch of Kosher salt
1 1/2 Tbsp. unsalted butter
8 (1 inch thick) slices of brioche bread
1 1/2 cups fresh raspberries
1/4 cup chopped pistachios

Whisk together maple syrup, cardamom and 1/2 tsp. cinnamon in a small sauce pan. Add orange peel strip and simmer over medium heat for 3 minutes stirring constantly. Remove and discard orange strip. set syrup aside.

Whisk together eggs, brown sugar and remaining cinnamon in a large shallow bowl until thoroughly combined. Add milk, orange zest and juice and salt. Combine.

Heat large nonstick skillet over medium heat. add half the butter to coat the pan. Soak half of the bread in egg mixture for 10-15 seconds per side. Transfer to hot skillet and cook until golden brown. Transfer to plate and repeat.

Drizzle French toast slices with warm syrup and top with raspberries and pistachios. Serve.
