1 c. sugar
1 egg
1 t. vanilla extract
3 T. all-purpose flour
½ t. salt
1 c. quick-cooking oatmeal, not instant

Preheat oven to 350º
Line cookie sheets with aluminum foil, parchment paper, or use silicon mats
Use electric mixer low speed to cream butter and sugar
Add egg and vanilla
Stir in flour, salt, and oatmeal, mix well with spoon
Drop by teaspoonfuls on cookie sheet
Bake 5-8 minutes
Let cool on sheet before peeling off.
