4oz Button Mushroom
2-Scallions
1/2 cup Chicken Stock
1-tbs Butter
4- tbs Sour Cream
1/4 cup Monterey Cheese
1-tbs Flour
Salt/Pepper

Pound chicken to 1/2 inch thick
Slice mushroom
Slice scallions ( seperate white and greens)
1)Heat 2 tbs spoons of oil on a medium size pan over medium-high heat.
2) Pat steaks dry, season with salt/pepper and place in hot pan. Cook about 5-8 mins on each side. Remove chicken from pan and set aside.
3) in the same pan add another drizzle of oil to the pan. Add mushrooms and the whites of the scallions. Cool until softened.
4) Add butter when melted add flour. Add chicken stock. Stir constantly. Add sour cream. Once combined, return chicken to pan and top each chicken breast with mushroom sauce.
5) Top each breast with Monterey Jack cheese. Cover pan with lid to allow cheese to melt.
6) Garnish with green scallions.

If mushroom sauce is too thick, add a small amount of water to the mixture before returning the chicken to the pan.
