2 scallions
1 tbs butter
2 tsp minced garlic
3/4 cup jasmine rice
2 tbs hoisin sauce
1tsp sesame seeds
1/2 tsp fresh ginger ( 1-inch)
20 oz shrimp

Prep:
Trim and slice scallions separate whites from greens. Peal and grate ginger.

1) Rinse shrimp, pat dry. In a medium bowl, combine garlic, hoisin sauce, remaining ginger with a sprinkle of salt and pepper. Toss shrimp in mixture and set aside to marinade.
2)In a small pot, melt butter. Add scallion whites and half the greens, and half the ginger. Cook until fragrant (about 1 minute)
3)Add rice, 1 cup water, a big pinch of salt to the pot. Broil to a boil , then cover and reduce heat to a low simmer. Cook 15-20 mins until rice is tender.Remove from heat. Keep covered and set aside.
3)Spray a large non-stick pan. Heat 1 tbs of oil over medium heat. Add marinated shrimp and cook, stirring until shrimp is cooked throughly and is pink. ( about 6 mins)
4) Plate rice and shrimp. Garnish with remaining scallions and sesame seeds.
