1-2 large onions, chopped to large pieces
1 large green pepper, chopped to large pieces
1 - 1½ pounds ground beef
1 can 32oz diced tomatoes
1/2 cup uncooked rice
1 Tablespoon chili powder
2 teaspoons salt
½ teaspoon pepper
2 cups sharp cheddar cheese

Prepare a covered 2 quart casserole dish by spraying with pam. Heat oven to 375º
In olive oil sautee the onion and pepper till soft, about 5-6 minutes. Add ground beef and cook till not pink (cook without breaking meat into too small pieces). Drain the fat. Add the canned tomatoes to skillet of meat and peppers and onion then add seasonings and stir. Now add rice and mix in. Pour all in the prepared casserole dish.
Cover and bake…375° for 45 minutes.
Remove cover and add cheese to top and return to oven uncovered. Bake 5 minutes till cheese is melted. Remove and serve hot.

This is my absolute favorite casserole that my mom makes. Anytime she would visit I would ask her to make this for me and she always would. It’s still my favorite.
