16 ounces black-eyed peas
16 ounces tomato sauce
water
¾ cup brown sugar
1 onion, chopped
salt (to taste)
pepper (to taste)
garlic, powdered or fresh (to taste)
ham, chopped

Directions:
Directions:
Soak blackeyed peas overnight. Drain. Soak at least 2 more hours. Drain. Cover black-eyed peas in water and bring to a boil for at least 30 min. Add 2 cans of tomato sauce and enough water to cover the peas. Stir in brown sugar, onion, and ham. Add salt, pepper, and garlic to taste. Simmer until peas are tender, usually 3-4 hours.
