Ingredients: 2 1/4 cups sugar 3 tbsp corn starch 1/2 tsp salt 5 cups milk 4 eggs, beaten 4 cups whipping cream 2 tbsp vanilla Rock salt for Ice Cream Machine

Directions:Combined sugar, cornstarch and salt in a saucepan. Gradually stir in milk. Cook over medium Heat approximately 15 minutes or until thickened,
Gradually stir about 1 Cup ( a tablespoon at a time ) of hot mixture into the beaten eggs. This tempers the egg mixture and won't cook the eggs. Add this egg mixture back into the hot mixture, stirring constantly. Cook one minute and remove from Heat. Refrigerate 2 hours or overnight.
Combine whipping cream and vanilla in a large bowl; add chilled mixture, stirring with a wire whisk to combine. Freeze directed by your ice cream maker's directions.
This makes 4 quarts.
Ice is very important----large chunks are not as good as finer pieces. Be sure to use lots of rock salt as per directions on the salt box. |
