Ingredients:  
3 Tbs chopped onion
1/4 cup butter
4 cups dry bread crumbs (about 7 slices cut into 1/2 inch cubes)
1/4 tsp salt
1/4 tsp pepper
1/2 tsp poultry seasoning
1/2 tsp ground sage
2-4 Tbs water or broth

Giblets
celery leaves
onion slices

Cook giblets:
Place giblets except liver in saucepan
Add water to cover and salt lightly
Add few celery leaves and onion slices to water.
Cover and simmer 1-2 hours for chicken 2 hours for turkey.
Add the liver and continue simmer for 5-10 minutes for chicken 20-30 for turkey
Cool giblets in broth.

Drain and chop giblets.

Cook onion in butter

Combine with bread and seasoning.

Toss with enough liquid (giblet broth best) to mositen.

Add chopped giblets.
