1 cup packed brown sugar
¾ cup butter (margarine), melted
1 large egg, room temperature
¼ cup molasses
2¼ cups all-purpose flour
1½ tsp ground ginger
1 tsp baking soda
1 tsp ground cinnamon
½ tsp ground cloves
¼ cup sugar

Directions:

1. In a large bowl, beat brown sugar and butter until blended.

2. Beat in egg and molasses.

3. Combine the flour, ginger, baking soda, cinnamon and cloves; gradually add to brown sugar mixture and mix well (dough will be stiff).

4. Cover and refrigerate for at least 2 hours

5. Preheat oven to 350º.

6. Shape dough into 1 inch balls. Roll in sugar.

7. Place 2 inches apart on greased baking sheet (or pan with parchment paper)

8. Bake until set, 9 - 11 minutes.

9. Cool for 1 minute before removing from pan to wire racks
