2 c all-purpose flour*
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Optional: Apple Pie spices: Cinnamon, nutmeg, cloves, ginger
1/2 c butter
1 c white sugar
2 eggs
1 1/4 tsp vanilla
1 1/2 c finely chopped apples
1/3 c packed brown sugar
1 Tbsp all-purpose flour*
1/2 tsp ground cinnamon
1 Tbsp butter

*can substitute a mix of all-purpose and oat flour

Directions:
Directions:
Preheat oven to 375º. Grease a 12 cup muffin pan.
To chop apples: I wash and core but do not peel apples. Cut in large chunks and pulse in food processor.
In a medium bowl, mix flour, baking powder, baking soda and salt and spices (if using).
In a stand mixer, beat together butter, sugar and eggs until smooth. Mix in vanilla. Mix in finely chopped apples. (I like to let them mix for awhile to blend the apple flavor throughout). Gradually pour in the flour mixture then blend. Spoon the mixture into the prepared muffin pan.
In a small bowl, mix the brown sugar, flour and cinnamon. Cut in the butter until mixture is like coarse crumbs. Sprinkle over the top of the batter in the muffin pan.
Bake 20 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan. If having trouble getting them out of the pan, use a butter knife and just lightly run the knife around the sides of the muffin. Cool on a wire rack.

Delicious! Sugar caramelizes on top. I like it with oat flour in topping, and used 25% oat flour in the muffins.
