Crust: I use store bought

Filling:
2 tbsp. olive oil
4 cloves garlic
Leaves from 1 sprig fresh Rosemary minced
2 cups mushrooms washed and trimmed
3 eggs
1 tbsp. Flour
1 cup heavy cream
1/2 cup milk
1/2 cup gruyere cheese
1 tsp. Nutmeg
Salt and pepper

Bake crust according to instructions.

Turn oven to 350º

In a large skillet, heat oil and add garlic, rosemary and mushrooms. Salt and pepper to taste. Cook on medium-high heat until liquid evaporates and mushrooms caramelize.

Whisk eggs, flour, cream, milk grated cheese, nutmeg and slat and pepper. Pour in pie shell. Evenly add mushrooms.

Bake 45 minutes Turing half way through cooking. Let cool before cutting.
