1 - 6 oz pkg Stove Top Stuffing, Chicken Flavor
2 tbsp butter
1-2/3 cup boiling water
1-1/2 lbs lean ground beef
1 large green bell pepper, chopped
1/2 medium sweet onion, chopped
1- 15 oz can diced tomatoes
1- 6 oz can tomato paste
1 tsp Dijon mustard
1 tbsp chili powder
1 tsp granulated garlic
1 tsp dried sweet basil
1 tsp red wine vinegar

Directions:
In a medium bowl put butter and boiling water, stir until butter is melted. Add stuffing mix and stir to combine, set aside.

In a large skillet, brown ground beef, drain off excess fat. Add peppers and onions and sauté until onions are translucent. Add diced tomatoes, tomato paste, Dijon mustard, chili powder, granulated garlic, basil and vinegar. Bring to a boil. Reduce heat and simmer for 5 minutes. Fluff stuffing mixture with a fork. Spoon prepared stuffing mix evenly over the meat mixture. Cover, let simmer for 3 more minutes. Serve.
