For the Dry Ingredients

4 c Old Fashioned Rolled Oats
1 cup unsweetened coconut flakes (not shreds)
3/4 c raw pumpkin or sunflower seeds
3/4 c raw almonds, chopped approx in thirds
3/4 cup raw hazelnuts or cashews, chopped in half
3/4 c dried cranberries or cherries (or a combination)
3/4 cup raisins
3/4 c dried apricots, coarsely chopped
½ dozen or so dates, chopped in big chunks

Preheat oven to 315º

Toss oats, coconut flakes, seeds, & chopped nuts together in a large bowl, reserving the dried fruits.

Pour the wet ingredients over the dry.

Mix thoroughly and pour onto a large rimmed baking sheet. Spread evenly, but don't press down.

Bake for 15-20 minutes until it begins to brown, especially at the edges. Remove from oven and mix, bringing the edges in to the center, then spread out again. Bake for approx 15 more minutes, watching carefully to avoid burning the edges.

Check for color and aroma. Should be dark golden brown for ultimate crunch and flavor.

Remove from oven and immediately top with dried fruits. Do not stir. Allow to cool completely before storing.
 

For the Wet Ingredients

4 oz virgin coconut oil
2 oz butter
2 oz brown sugar
2 oz honey
2 Tbsp cinnamon
Pinch salt
1 tsp vanilla extract
1/2 tsp almond extract

Directions:
Directions:
Combine coconut oil, butter, sugar, honey, cinnamon and salt in a small saucepan.
Bring to a boil over medium heat.
Reduce heat and simmer while prepping dry ingredients.
Turn off heat and add vanilla and almond extracts. It may boil up a bit. Stir to combine.
Immediately pour over dry ingredients, toss thoroughly.
