1 1/2 cups vegetable oil
1 1/2 cup sugar
4 eggs, well beaten
3 cups grated carrots (just less than 1 lb.)
2 cups flour
1/2 tsp salt
2 1/2 tsp baking soda
2 tsp ground cinnamon
2 tsp ground allspice
1 cup chopped pecans
1 cup raisins
1 tsp vanilla extract

Directions:
Directions:
1. Cream oil & sugar. Add eggs & carrots and mix well.
2. Mix dry ingredients together.
3. Add flour mixture to carrot mixture a small amount at a time, beating well.
4. When blended, add pecans, raisins and vanilla.
5. Pour into 3 greased and floured layer pans and bake at 350°F for 25-35 minutes.
