Fill the bread dish ⅔ with flour then make a hole in the centre. Set 3 tbsp yeast in qt of warm water and about ½ cup sugar and 2 tbsp vinegar (1 tsp Epsom salts - optional). Boil a potato (sliced, and mash it up in the water or use the water drained from potatoes (boiled). Add about 4 qts to 6 of water and depending on the size of baking I use about 6 (counting the potato water). Add 12 to 16 tsp of salt (1 tsp per loaf) and ½ to 1 cup (margarine, bacon grease, or lard) and mix. You may have to add a bit of extra flour. Let rise once and mixdown. Next time put in the pans or if you want to put half in and put the rest in later mix it down and then it will be ready for your second oven full.
