4 C cooked chicken diced or (left over turkey or rotisserie chicken)
⅔ C chicken broth
¼ C onion, diced
1 C celery,diced
2 T butter
2 Cans cream of mushroom soup
4 T soy sauce
1 C cooked rice
1 C cashew nuts
1 C chow mein noodles

Directions:
Directions:
Preheat oven 375º
Saute onion and celery in butter. Add chicken broth and soup. Simmer for 5 minutes. Add chicken, seasonings and rice.
Place mixture in casserole dish and bake fir 30 minutes or until bubbles..
Spring nuts and noodles over the top
