1 cup shortening or butter
1 cup sugar
1 tsp. vanilla
½ tsp. cranberry extract
1 egg
2 cups flour
1 tsp. baking powder
½ tsp. salt
1 to 2 cups fresh or frozen cranberries, coarsely chopped
1 cup chopped almonds or other nuts

Preheat oven to 350º. Spray cookies sheets with cooking spray. Beat together shortening and sugar together until light and fluffy. Add extracts and egg; mix well. Combine flour, baking powder and salt in a separate bowl. Add to shortening mixture, mixing until soft dough forms. Stir in cranberries and nuts. Immediately drop dough by rounded teaspoonfuls onto cookie sheets. Bake for 10 minutes or until golden brown. Transfer cookies to wire rack; cool completely.
