1.5 lb ground beef
1/2 to 1 onion, diced
1/2 small head of cabbage (or bag of coleslaw mix)
1 or 2 sliced bell peppers (optional)
1 or 2 chopped fresh zucchinis
soy sauce
garlic salt and pepper to taste
add some hot sauce for zing if you like 😉

Brown ground beef with onion and bell pepper in a large skillet with lid. Don’t overcook beef, cook just till pink is gone from meat. Drain the grease and set aside.

Add 2-3 tablespoons olive oil to pan. Add zucchini and cabbage and stir. Add garlic salt, pepper, and soy sauce.
Cook over medium heat for approximately 10 minutes until the zucchini is crisp tender (I don't add water, zucchini has enough).
Add the meat back to the skillet of veggies, stir. Cook another 3 minutes. Add any extra seasoning if desired.
Thats it!

Great served with cottage cheese or topped with parmesan!

This does not sound like it would be delicious but it truly is! This is a great low carb dinner option that you can prepare in a flash. Also you can substitute or add any other Veggies that you have on hand.
