3 egg yolks
1/4 cup cocoa
2/3 cup white sugar
2 cups half-and-half (or can use 1-1/2 cups milk and 1/2 cup cream)
1 teaspoon vanilla extract

Directions:
Directions:
Put the egg yolks in a blender. Put the cocoa and sugar in a small saucepan and whisk together until well combined. Add 1/2 cup half-and-half (or 1/2 cup milk) and stir together. As soon as the milk-cocoa mixture comes to a boil, turn on the blender to a medium speed and pour into the egg yolks (this should raise the temperature of the egg to a safe level). Add the vanilla. Pour the mixture into a quart jar or such and chill. Pour mixture into ice cream maker and follow manufacturer’s directions.

CHOCOLATE-PEANUT BUTTER ICE CREAM: Add 1/2 cup creamy peanut butter to blender when adding vanilla. Proceed as directed.
