MARINADE:
3 tablespoons soy sauce
3 tablespoons vinegar
3 tablespoons brown sugar
1 tablespoons minced fresh ginger
1 tablespoons minced fresh garlic
2 tablespoons minced green onion

1-1/2 pounds fish, such as red snapper, catfish, etc.
2 eggs, beaten
Floured bread crumbs (mix bread crumbs with equal amount of all-purpose white flour)
1 teaspoon crushed red pepper (or more to taste)
1 cup water or broth
1 tablespoon cornstarch mixed with 2 tablespoons water

Mix marinade ingredients. Cut fish into about 1 x 3-inch pieces. Marinate for 30 to 40 minutes. Fill a large pot or electric fryer halfway with vegetable oil and heat to 360 degrees Fahrenheit. Remove fish from marinade and put in the beaten egg (reserve marinade). Dredge the fish in floured bread crumbs. Refrigerate until oil is hot. Fry fish in hot oil until golden brown. Drain on paper towels. Meanwhile, put marinade in a small pot and add the red pepper and water (or broth). Bring to a boil. Add cornstarch mixture and cook until thickened. Put fried fish on platter. Pour sauce over fish and serve.
