2-1/2 pounds pork, cut into cubes
2 tablespoons whiskey or sherry
Oil for deep frying
1 carrot
1/2 onion, chopped
1/2 bell pepper
1 cup canned pineapple (save juice)
2 tablespoons soy sauce
2 tablespoons tomato paste
6 tablespoons sugar
1 cup pineapple juice
1 tablespoon cornstarch
1/4 cup water
4 eggs
1/2 cup all-purpose white flour
2 tablespoons peanut oil

Directions:
Directions:
Marinate the pork in the whiskey or sherry for 20 minutes. Fill a large pot or electric fryer halfway with vegetable oil and heat to 375 degrees Fahrenheit. Prepare the vegetables by cutting them into equal-sized cubes and put in a large bowl, along with the pineapple; set aside. Combine the soy sauce, tomato paste, sugar and pineapple juice; set aside. Combine the cornstarch and water; set aside. Beat the eggs with a whisk and add to the pork, stirring to coat. Add the flour and stir to distribute. Deep fry the pork until browned, and drain on paper towels. Heat the 2 tablespoons peanut oil in a wok or large skillet. Stir-fry the vegetables and pineapple until tender-crisp. Add the sauce and bring to a boil. Add the cornstarch, stirring, and bring to a boil. Add pork and heat through.
